SHIFT (noun): A slight change in position, direction, or tendency.

Our mission is to SHIFT the mentality of the “normal” dining experience. We are an American shared plates restaurant where food is meant to be enjoyed in a family style manner.

Pastry Chef and owner, Dara Wong, hopes to challenge locals and travelers alike to look beyond what they might consider typical “mountain town” food. Shift aims to focus on bold flavors, a locally driven menu, and artfully composed plates served up amidst a casual and approachable ambiance.

DARA RODGER // owner // pastry chef

Shift Owner Dara Rodger has a passion for pastry and a penchant for perfection, and she further developed both while working for some of the most notable names in the industry. A business management graduate of the prestigious University of Denver, Dara boasts an impressive resume thanks to time spent alongside culinary legends such as Bobby Stuckey and Lachlan Mckinnon-Patterson of Frasca Food and Wine (Boulder, CO). She has also worked for guest chefs Daniel Humm of Eleven Madison Park’s (New York, NY) and Marc Vetri from Vetri (Philadelphia, PA). Prior to launching Shift, Dara served as the general manager of Flagstaff’s own Tourist Home Urban Market. A Division I swimmer for the University of Denver, Dara spends much of her free time in the water, hiking and hitting the slopes.


George Murkowicz // Chef De Cuisine

Chef George is from Scottsdale, Arizona. He first started working in a kitchen at age 17 working under Chef Matt Carter at Scottsdale's French Zinc Bistro. By age 19 he moved to work under Chef Paul McCabe at T.Cooks restaurant at the Royal Palms Hotel, graduating to one of the kitchen leads.

Ready for change, he moved to Santa Barbara, California. He worked at the Cal-American restaurant Scarlett Begonia, eventually becoming the Executive Chef, creating farm to table, and coastal inspired dishes. Missing Arizona, he moved back to northern Arizona via time at L'auberge in Sedona and finally SHIFT in Flagstaff. George is an award winning Chef who fuses many European and American cuisines to give his patrons an artful unconventional experience they will savor for a lifetime.
